| The soup is plenty good enough to serve as is but I like having it gratine style. Slice the crusts off one slice of low carb white bread for each bowl of soup youll be making and toast until golden brown. Ladle hot soup into oven-safe bowls, place a slice of toast on each and top with a slice of Swiss or provolone cheese. Place bowls in the broiler until bubbly brown and serve.

| Has this question ever presented itself to you Im sure if youve been following the low carb way of eating for any significant amount of time, you have reached the point of I cant face eggs again this morning. Sure, there are a lot of other choices out there, but lets be real, eggs are the standard fare, day in, day out.
Well then, my exasperated, at-your-wits-end low-carber, what are you going to do
Better yet, what did I do
On this particular day, I stuck my head into my odious refrigerator and started rummaging around. After a little bit of digging and shuffling through the heads of lettuce and leftover bits and pieces of this and that, I found a bowlful of Rice-Aflower from the previous evening, a little wedge of Havarti cheese that had been feeling rather lonesome at the way-back of my refrigerator, a little dab of cream and, of course - that staple of the low carbers diet arsenal - some eggs.
Then the thunder started rumbling and the lightning started flashing and ... I had a brainstorm. Why didnt I put all that yummy stuff together and make myself a lovely casserole for breakfast Really, you cant go wrong with good ingredients. I know, not the typical fare, but hey, that was the point of the whole thing, wasnt it
I plopped the Rice-Aflower into my quart-sized casserole dish, threw in some eggs, seasonings and topped it off with the cheese. I carefully placed my creation into the oven and baked it until it was a lovely golden brown.
Can you say Yummy. I happily ate my creation not only for breakfast, but I served it to my family for dinner as well. Hey, we low carbers not only have to be creative sometimes, but thrifty as well.

| And something else very good happened. I started paying attention to calories, because that little calories burned meter was right there for me to see. Here I am, sweating my rear off to burn 300 calories... and I pick up a low-carb bar that is 270 calories and say, mmmm its not really worth it...I started cutting out seconds of protein at dinner...I started choosing to snack on celery and carrots with low-fat (and low-carb) dressing for snacks instead of nuts or cheese or meat or egss.
Now before you write me a nasty note saying, But isnt the whole point of low-carb so you can eat as much as you want without counting calories we better backtrack.
NO the whole point of low-carb is not, and never has been (to my knowledge) that you can eat as much as you want without ever considering calories.
Of course you dont need to obsess about calories, or go really low-cal. That - most of us would agree - is hardly satisfying. But where this idea of eat all you want came from is really beyond me. People took Dr. Atkins saying eat until you are satisfied to mean eat as much as you want and those two NOT the same thing. I might WANT to eat three cheeseburgers (albeit bunless) and two big sausages and a boiled egg at one sitting, but unless Im on death row or some kind of marathon athlete or something, Id really have a problem if that much food was what it took for me to feel satisfied day in and day out.
Yes, during the first phases of a low-carb diet many very obese people (and include me in this) can eat VERY large quantities of the allowed foods and still lose weight really well. Thats the big advantage when youre starting out, and your whole life revolves around food. But at some point your body mass has decreased enough that you PHYSICALLY CANT consume the same number of calories you were consuming during induction, unless youre offsetting that with a HEC of a lot of exercise. Ive been running this site since 1999, and this particular fact is one that cant be ignored. Ive seen this stall happen to people over and over again. Theres no question in my mind (although of course this is anecdotal not scientific evidence) that many, if not most, low-carb dieters hit a stall about about half or three quarters of the way to their goal and unless they take into account the fact that their body is 50 or 75 pounds less than it was when they started and therefore requires less energy they will NOT move on. This is the point at which they need to either eat less or exercise more.
And of course, if you are still keeping carbs very low, you will most likely be able to consume more calories than you would if you were doing low-fat, high-carb, as the study done by Penelope Green at Harvard a year or so ago showed. I was in a chat with Drs. Mike and Mary Dan Eades (authors of the Protein Power series) a while ago, and they told the story of a patient of theirs who was not losing weight and after analyzying her diet they found out why. She was consuming 4,000 calories a day. What amazed them was the fact that she wasnt GAINING weight. So yes, there really IS a metabolic advantage. But its an ADVANTAGE not an FREE PASS.
Then we come to the other point. there does come a point at which your life should STOP revolving around food. For me, ketosis went a long, long way to accomplishing this. I have written elsewhere on this site about how it was like a wonder drug that turned off the constant food cravings I had suffered from all my life. But there were - and still are - many personal issues that I needed to work through to get to the point where food was no longer so important. Ketosis was the key, but there were other actions involved in opening the door.
Which brings me back to exercise.
The physical aspect of adding muscle and burning calories aside, working out on a regular basis has been a life-transforming experience because it showed me I could MASTER that area of my life. That good feeling is spilling over into other areas, places that I felt inadequate or lacked confidence. A lot of things have changed for me in the past year because of that.
Well, this section is dragging on too long. To finish quickly, I recently switched gyms and am working out at Golds, which I absolutely love. A different atmosphere, certainly. Less warm and fuzzy, but a lot more exciting and challenging. I am truly looking forward to where Ill be a year from now, God willing. I now eat fruit every day (which I didnt trust myself with previously) and I have plenty of energy and stamina to get through each day even when I really push the work out. Its been a very exciting experience. And I wish it on every one of you.
Oh, and have I lost more weight You bet. As far as the scale goes, only 20 pounds. But two sizes in pants and shirts. And I look, well, a WHOLE lot different. Or so my husband tells me. (grin)
Other Not So Positive Things
Many of you know that I was the web editor for LowCarb Living Magazine, a full-color national publication for the low-carb lifestyle. I was also a contributing writer for every issue. I thought it was a GREAT magazine, as far as the product went, and the March/April issue was something we were all very proud of.
Unfortunately, it seems like it was the last issue.
I have not spoken about this publicly up to now, in hopes that the magazines owners could get something worked out. But since Im getting many emails from subscribers asking about it, I feel a duty to tell you what I know.
1. I was made aware, I guess beginning in February, that the magazine was having money issues. Which made sense because that was the real beginning of the end of the low-carb media hype. The media had decided low-carb wasnt a story any more, and Im sure with pressure from big food, was really playing it down. Advertisers - never banging down our door anyway - were gone. One in particular left the magazine holding the bag for about 20K in unpaid bills. Still, we hoped to hang on because we felt we had a very good product, and knew there was a need for it.
2. In March, I was told there was no money to pay me going forward. (To be very fair, I must state that I am not owed any money - though Ive heard that many others are.) They asked me to stay on anyway, which I could not afford to do. I also learned that most of the staff - the editor, publisher, creative director, etc. had all resigned.
3. I heard that the owners were trying to raise money to keep it going, or looking for a buyer for the sub list so the subscriptions could be filled with something else. Thats pretty standard practice for magazines that tank, and apparently many start-ups do.
And thats what I know for sure. Im here in NY, theyre out in California. The web site is still live, so they must be paying the bill. As far as I know there was no May/June issue. As far as I know, subscribers have never been contacted with an explanation. Its very bad news.
Im truly sorry if you subscribed on my recommendation, which was always based on what I felt was the quality of the journalism in the magazine. I really did not think it would come to this. I was told that subscriptions will be filled with a substitute if worse came to worse.
And Ive been very hesitant to speak about it, just in case the owners were able to get some funding or make some other magic happen.
I would jump at the chance to work again with the team that left. They are great people, and knowledgable professionals.
I hope those of you who subscribed through the site will forgive me. I never asked for or received any compensation for subscriptions that came from here. It was all just enthusiasm on my part.
Live and learn, I guess. Again, Im very sorry.
On to Better Things
Which brings me to today - and the site redesigned, and a very EXCITING new feature Im going to be able to offer in the next few weeks. It will be EXCLUSIVE to LCE, and I think it will go a long way to doing what I feel needs to be done in the low-carb world - which is raise the level of discourse.
Were no longer lunatics crying out in the desert. Low-carb, despite the ignorant who still find innuendo and outdated science sufficient, is really much more main-stream than I ever dared hope. Its time to move on from the but low carb DOES SO work debate to other things. Weve still got a lot of work do to, because there are still MANY people who are trying low-carb for the first time or coming back to low-carb after many years, and they need support, information based on science, and a place to hang with their friends.

Later on you may decide to combine features from different plans, or customize a plan to suit your style and metabolism, but now is NOT the time to do that. Pick one of the low carb plans, get the book, read the whole thing, and follow the plan faithfully... There are no guarantees where health and weight loss is concerned EXCPET this. if you try to wing it, you WILL fail. In addition, youll probably annoy everyone else in the forums and chat by asking questions that you SHOULD know the answer to, except that you havent taken the time to do your homework. We love to help, but nothing on this site is designed to be a substitute for the knowledge you should have of your chosen plan. Start NOW. Not tomorrow. Not Monday. NOW. No kidding... Why wait, except to try and put it off Go through your kitchen and throw out ALL the high carb junk TODAY. It isnt good for the kids, it isnt good for the significant other, it isnt good for the dogs, the cats, the birds, the iguanas, the llamas...and it isnt good for you. All its going to do is sit there and call your name all night. GET IT OUT OF THE HOUSE. Go low carb shopping ASAP. Make sure you have what you need to get through those tough initial first days. See below for links to our downloadable shopping list and our Shopping Tips article. Be prepared for a few days of sugar withdrawl. The next few days could be pretty rough for some folks - others will be luckier and get through without too much trouble. What you might expect. headaches, fatigue, edginess, and maybe some leg cramps. These symptoms usually last for three days or so - but once youre through that, you should actually start feeling the surge of energy that most of us experience once our bodies are rid of all that nasty processed sugar. To avoid the leg cramps, talk to your MD about taking supplements with calcium/magnesium and potassium. If you experience fainting, vomiting, or other serious symptoms, it is almost certainly NOT diet related, and you have something else going on. Contact your doctor immediately. The change in your eating pattern may effect your bowels, so plan ahead. Some people will experience constipation in the first week or two of their diet. Plan ahead for this by starting to take some *sugar free* psyllium (such as Sugar Free Metamucil) or some flax seed oil from the very beginning. Drink LOTS AND LOTS of water, and eat as much vegetable and/or fruit as your plan allows. And yes, some folks may experience the *opposite* effect... if you are one of these unlucky ones, you may need to cut back on your fat intake right now and increase it gradually again until your system adjusts. If your loose stools persist for more than a few days, consult your doctor - you may have something else happening. In all almost all cases weve seen in the four years weve been running this site, these symptoms clear up quickly and are a function of your bodys needing to adjust to a new way of eating. In fact, a comment we hear is that what folks thought was irritable bowel syndrome was really just a growing intolerance to processed sugar and wheat. Dont get a pre-conceived notion in your head as to how much weight you should lose during the first few weeks, based on others weight loss stories. Its great to read the success stories of others, and we love to publish them. But everyones metabolism is different, and people lose at VASTLY different rates. If theres one rocky shoal against which weve seen more low carb ships broken apart, its she lost 20 lbs on induction and I only lost 4 and that must mean this diet doesnt work for me . Dont go there. As long as youre losing, and as long as your gettting smaller (see next item) youre doing GREAT. Stalls, plateaus and ruts happen to everyone at different times. Some are just slow losers. Well say it again. dont compare your rate of loss to anyone elses. Youll just set yourself up for disappointment. Take starting measurements , and use the tape as frequently - if not more frequently - as the scale to gauge your progress. It is a common experience for us to lose inches while the scale stays the same for a while. Dont try to figure it out - just accept it. If the tape measure says youre making progress, you are. | So with this in the back of my mind, from time to time Id start in again. The rice diet, low fat, whatever was vogue and promised miraculous results. A miracle was the only thing I could even fathom might work at this point. I did lose about 40 pounds with Phen-Fen, until that was taken off the market. Get this. I didnt even care about the potential heart problems from Phen-Fen. I was just disgruntled that my magic bullet was no longer available. While I gained the weight back, I was diagnosed with a hypoactive thyroid during that time, and getting medication for this helped. It wasnt my weight loss miracle, but I felt better and had more energy. I also tossed my scale in the trash, because it did nothing but depress me.
I kept pretty much on the same track until about a year and a half ago. I started hearing more and more about low-carb, and my daughter started and was losing weight. I had seen a couple of pictures of myself (like me at the beach) that were upsetting to me. that sure wasnt the image I carried around in my head. So I decided to give it a go, low-carbed for 2 weeks and lost 12 pounds, but just hadnt made the mental adjustments necessary. I was sick the first four days with a horrible sugar crash, and hated it. I didnt have the book, was eating mostly eggs and bacon cheeseburgers with an occasional salad thrown in, and just wasnt happy. It was still all or nothing for me. I was obsessed with being on a diet, not really changing my life. Even though it was working, I was sick and tired of dieting, so I tossed up my hands, said Screw this. and ordered a big ol pizza. And that was that.
Still, I didnt forget. The next annual visit to the doctor, she showed me a chart. At my BMI of 42, I had roughly a 45pct. risk of developing diabetes. This, coupled with my family history, moved the diabetes issue from if to when in my head. Of that 20 year timetable to diabetes my first doc had predicted, fifteen had passed. I didnt like the way this was going...Doc suggested low-carb. It felt like the universe was pounding the the same message over and over again into my head and it was making an impression. I decided I needed to get serious and now. Doc prescribed some Wellbutrin for me, to help with mood swings and weight loss. It was time.
So I started researching low carb in earnest. I knew it worked, after all, and I knew I didnt have to be hungry. I went to a lot of low-carb websites, including this one. I read dozens of success stories and looked at hundreds of before and after pictures.
Slowly, surely, a little bit at a time, it began to take root in my brain. Hey, maybe I could do that, too. Just maybe While I felt a bit ridiculous even considering it was possible for me at first, it was clear. the tide was turning. I started getting visions of myself in my head, strong, healthy and thin. I started to believe, and I knew instinctively that belief was opening a window of opportunity. I was determined to climb right through that window. (If youve ever shared your story or pictures, thank you. I owe a debt of gratitude to all of you, because you helped me believe it was possible.)
I got the Atkins book and a low-carb cookbook, because I knew I needed to learn the rules first and I knew I needed more variety in my eating than Id managed with my first run. I wasnt going to make the same mistakes. I got some vitamin supplements. I immediately started tapering off my extreme Dr. Pepper and Cappuccino habits, which amounted to a sugar IV all day long. I started to work on upping my activity levels, just a little here and there. I got a couple of exercise tapes, although I still dont use them too much. But I was moving more, nonetheless. I started drinking my water. Before I ever started low-carbing, I started making the changes in my lifestyle that I had learned would be vital for my success. They were very small steps at first, but they were steps in the right direction.
Mostly, though, I started putting more energy into visualizing myself thin, building on the initially very tenuous idea that it could happen for me, that I could do it. I actively worked on believing. With belief, the rough patches become surmountable, worth the trouble of overcoming.
I began low-carbing for real on November 15, 2003. I weighed about 250 then , and wore a 26W. And mannow
Nowwell, at this writing, I weigh 147 and comfortably wear a size 10. Ive seen my BMI go down from a very unhealthy 42 to a low-risk 24Ive lost well over a yard of fat from about my body. Ive dropped 16 sizes and look younger than I have in years. And one of the nicest perks. Ive seen my success (and altered grocery shopping habits) positively impact my family. My oldest daughter has lost over 60 pounds, dear hubby has lost over 30, and even my carb-loving youngest who refers to this way of eating as the cult has lost over 20 pounds.
Over this past year, Ive lost an average of just under 2 pounds a week. Not amazing by anybodys standards and yet, a year later, that means Ive lost over 100 pounds. People get fixated on the daily fluctuation of the scale readout, but in the long haul, it just doesnt matter a whit. I do use the numbers to help me chart my progress, but thats all it is. Id like to lose another 15-20 pounds, or perhaps wear a size 7 or 8. This is something I didnt think was possible for me just a short year ago. Now, I know better.
See, it feels like magic now, but there was nothing magic about it. I just kept working on keeping my attitude positive and plugging away. I did everything I could think of to build myself up and give myself every advantage. I was consistent eating low-carb, if far from perfect.
